Kare Kare Recipe

This kare kare recipe is one of my favorite, my mom used to cooked this when i was in the Philippines back years ago. So here is the easy recipe i am sharing .

 

Ingredients:

  • 1 kg oxtail or beef meat as substitute
  • 1 small flower bud of banana or ( puso ng saging), sliced
  • 1 bunch of pechay ( bok choy)
  • 10 pieces of beans ( cut about 2 inches in length)
  • 3 pieces eggplant, sliced
  • 1/2 cup ground peanuts
  • 3 tbsp. peanut butter
  • 2 tbsp shrimp paste
  • 750 ml water
  • Annatto seed soaked in water
  • 3 cloves garlic, minced
  • 1 onion chopped
  • salt and pepper
 

Method:

  1. Bring water to boil in a pot then add oxtail and onion, simmer for up to 2 hours until it becomes tender.
  2. Add the peanuts, peanut butter and water from annatto seed mixture.
  3. Simmer for another 10 minutes.
  4. In a separate pan, saute garlic then put banana flower bud, eggplant and beans. Cook for 7 minutes.
  5. Add the vegetables in a pot where the oxtail or meat is.
  6. Salt and pepper to taste.
  7. Lastly add the pechay and put the lid on and turn off heat. The steam will cook the leafy part of the pechay.
  8. Serve with shrimp paste on top.
  9. Enjoy!

Filipino Style Spaghetti

Most Filipinos love their own style of cooking spaghetti which is a little bit of sweetness in it. So to those who want to try and cook Filipino Style Spaghetti here is the quick recipe;
Ingredients:
  • cooking oil
  • 1 onion , chopped
  • 100 grams bacon, diced
  • 250 grams ground pork,or ground beef
  • 5 pieces hotdogs , sliced
  • 500 ml tomato sauce
  • 1/4 cup water
  • 1/4 cup tomato ketchup
  • 1 tbsp. sugar
  • salt and pepper
  • 500 grams spaghetti
  • grated cheese
Cooking Method:
  1. In a pot put the ground meat and cooked it until brown.
  2. Add some oil and add onion.
  3. In a separate pan, fry the bacon and hotdog until golden brown or toasted.
  4. Add the ground meat.
  5. Pour in the tomato sauce, water ketchup and sugar. Let it boil then simmer on low heat for 40 minutes.
  6. Salt and pepper to taste.
  7. While sauce is in simmer, cook the spaghetti until al dente or per packaging instruction.
  8. Drain spaghetti and rinse it with hot water. Drain again after rinsing water.
  9. Combine sauce and cooked spaghetti together and grate plenty of cheese on top.
  10.  Best serve when chilled or hot.
  11. Enjoy!
